Pizzeria Buildout Costs: What to Budget Beyond Equipment
Prepare quote scopes for freight, rigging, utilities, ventilation, plumbing, permits, and installation without treating missing prices as zero.
Why the equipment price is only one line
An oven or mixer price does not tell you what delivery, utility work, ventilation, fire protection, plumbing or installation will cost at a particular site. The SBA advises identifying startup expenses before launch, separating one-time from monthly costs and asking vendors or service providers for uncertain amounts. For a pizzeria, keep equipment purchases and buildout work as separate scopes so a quote gap stays visible.
The CFP plan review guidance shows why a menu, equipment schedule and mechanical/plumbing plans belong together. The exact construction scope depends on your site and local review; this page gives no national shop total, cost range or opening duration.
What each quote needs to cover

Ask for comparable dealer and contractor responses
Give the dealer your intended menu, the exact equipment list and quantities, selected configuration if known, target location, clear door measurements and unloading constraints. Ask the dealer to identify the model/SKU, what the price includes, freight terms, lead-time evidence, installation exclusions and any required site work.
Give each contractor the same site notes, existing drawings, utility records and proposed equipment installation sheets. Ask them to state the scope, assumptions, exclusions, permit responsibility and whether another trade is providing related work. A quote that simply says “install oven” does not resolve electrical service, gas, hood or delivery scope.
When one actual quote includes another scope, record the included item once and name the quote that covers it. For example, if a dealer’s written freight line is already included in a contractor’s documented installation quote, do not add an extra freight allowance to the known subtotal. If the inclusion is unclear, leave it as a quote question rather than entering zero.
Budget quote worksheet
Use a blank amount for an unquoted scope. “Assumption” is a user estimate, not an observed market price. This worksheet is not saved into your plan automatically.

Move from worksheet to a working budget
In My Plan’s Budget, add equipment prices only to selected purchase lines. An observed listing can be a starting point, but confirm the exact configuration and current quote. Add construction amounts to their own scopes with source and date. The known subtotal is not a complete buildout budget while selected equipment or scope lines are missing prices.
Keep other business startup costs such as rent, payroll, inventory and insurance in your broader business plan. The SBA’s startup-cost guidance covers these beyond the kitchen buildout.
