Pizza Shop Equipment List: Build a List for Your Concept
Organize dough, prep, baking, refrigeration, washing, and pickup needs before choosing models or assuming a kitchen can meet your volume.
Start with the food and service flow
Your list should explain what each station must do before it names a product. The CFP plan review guidance connects the intended menu, food flow, storage, equipment schedule and layout. A slice counter, delivery-focused shop and full-service dining room can share equipment categories while needing different holding, finish and handoff arrangements. The Kitchen Map can help you trace the path from dough through pickup.
Keep a requirement open when you do not know the right model yet. A candidate found during research is not a selected purchase quantity, and a machine’s published capacity alone does not prove your planned service peak can be met.
Build the equipment list by station
| Workflow stage | Need to preserve | Question before choosing a model |
|---|---|---|
| Dough preparationCore need | A way to weigh, mix, portion and move dough at your planned batch rhythm. Research category | Hand mixing or mixer? What batch sizes and labor are realistic? |
| Storage / proofingConcept-dependent | Space and containers for dough at the time and temperature your process calls for. Research category | What is the dough schedule, storage volume and refrigeration need? |
| PrepCore need | A practical assembly surface and ingredient holding near the oven line. Research category | Which toppings need cold holding and how many orders overlap at peak? |
| BakingCore need | An oven approach matched to pizza style, fuel, ventilation, space and service rhythm. Research category | What size pies, bake style and service peak are you planning? |
| RefrigerationCore need | Cold storage for ingredients, prepared food and service stock. Research category | How much receiving, prep and service inventory must be held safely? |
| Finish / boxCore need | A place to cut, inspect, box and pass pizzas onward. | Will slice reheating, delivery boxing or dine-in plating change this station? |
| Wash / sanitationCore need | Handwashing, utensil cleaning and sanitation facilities for your operation. | What sink and warewashing arrangement will the local authority review? |
| Pickup / holdingService-dependent | A clear handoff point; hot holding only if the menu and service require it. | Where do customers or drivers wait without blocking baking and boxing? |
Dough dividers, rounders, sheeters and presses can be a later scale-up decision. See optional dough automation only after defining the process and labor constraint it would solve.
Let the concept change the questions
Slice shop
Separate whole-pie baking from slice reheating, display and rush handoff. Ask what will be held, where, and for how long.
Delivery / takeout
Trace the oven-to-box-to-driver route and holding needs. A fast oven does not remove a boxing or pickup bottleneck.
Dine-in or wider menu
List non-pizza preparation and wash needs explicitly, then confirm whether they change the cookline, storage or local review.
The CFP guide ties equipment needs to menu and process, including cold storage, cooking and warewashing. These examples are planning prompts, not fixed equipment packages or output guarantees. Review its equipment and food-flow sections.
Equipment needs checklist
Check a station when you have described the need. You can leave the model blank; this list is not saved as a purchase plan until you make a selection in My Plan.
Use the Planner to keep unresolved stations, candidate models and selected equipment lines separate. The checks here stay on this page until printed.

Research real models only after the requirement is clear
For example, the Hobart HSL300 has documented three-phase electrical configurations in its manufacturer sheet. That fact helps you compare a candidate with your site’s reported phase; it does not imply the mixer is the right size for your dough program. You can also inspect a Middleby Marshall PS360G oven and a True pizza prep table as sourced examples. Review each model’s exact configuration, installation document and availability before moving it into a selected equipment line.
If a station has no catalog category, such as wash or boxing, keep the need in My Plan and record an existing or off-catalog solution only when you know what it is.
Sources and scope
These U.S. planning references explain what to collect and discuss. Food Code guidance is a model, and local requirements, lease rights, equipment configurations, and approvals must be confirmed for the actual project.
- Conference for Food Protection — Food Establishment Plan Review Guidance Document (2025)Menu and food flow drive equipment, storage, layout and utility questions; the guide does not approve a particular model.
- FDA — Food CodeModel food safety framework; local adoption and application must be checked.

Continue with your own build
Keep every station visible, including needs that do not have a model yet. The guide worksheet stays on this page until you record what you have verified in your plan.
